Inspired by the article we did with @melkoghonning we wanted to share some of our favorite summer recipes here with you!
Fresh potato bowl
You need:
5 big potatoes
2 avokados
10 small tomatoes
1/4 red onion
Lettuce
Paprika spice
Onion powder
Salt and pepper
This is what you do:
Peel and dice the potatoes into small boats (like the photo) and place them on a tray. Set the oven on to 200 degrees and spice the potatoes. Place them in the oven for 15 mintes and then turn the potatoes around and place them back in for 10-15 minutes. In the mean while, mash 1-2 avocados, together with the tomatoes and onion. Add a pinch of salt. Rinse and wash the lettuce, and place everything together in a bowl! Enjoy.
Hummus
This is just great for anything. As a dip, in your spring rolls, with bbq, you name it hummus should be there.
You need:
200 g chickpeas
5 ss olive oils
1 pinch of salt
1 ss tahini (optional)
some water
How you do it:
Rinse the chickpeas well (make sure all the bubbles in the water go away) and place them in a blender with olive oil, water, salt, and tahini. Blend well and voila! Also, make sure it’s silky soft before you are done - if it’s too hard just add some more oil or water.
There is no doubt about it, smoothie bowls are here to stay! We both like to keep them quite plane in the morning with just fruits, because fruits digest super fast. Starting the morning with fruits has been a game changer in our lives, and has improved hair, nails, digestion and overall energy levels!
Smoothie bowl
You need:
2 bananas
2 cups of blueberries
1 orange
1 ts spirulina
1 ts barley grass powder
1 ts Rose powder
How you do it:
Place it all in the blender and blend until super smooth. Top with any fruits you like!
