We just wanted to share something with you that you actually HAVE to try. There is no way out you guys. Because itโs easy, delicious, healthy and really comforting food to enjoy in the winter!
Itโs time to make a banana bread ๐ ๐ ๐
Itโs also an amazing way to save any brown bananas from being thrown away. Honestly, we have not thrown away a banana in many years after learning simple tricks like this one. And that definitely feels good.
Over to the recipe!
Vegan (gluten-free) banana bread
The recipe is from โA little insanityโ, but we adjusted it a little on the way. We added a very special ingredient that makes the bread taste a little bit like chocolate - can you guess which one it is?
You need:
Dry ingredients
2 cups flour (can be gluten-free or not)
2 tsp baking powder
1 tsp baking soda (natron)
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp cardamom
Wet ingredients
5 medium ripe bananas
1/2 cup coconut oil
2 tbsp maple syrup
2-4 tbsp Dream Almond-Hazelnut milk (start with some and add as much as needed)
Optional/other
Maple syrup
2 pears
Vegan cream cheese
Any nuts or seeds you want on top
1/2-1 banana to decorate the top
Chocolate chips
How to:
Preheat oven to 350 degrees.
Mix together dry ingredients.
Blend the bananas and the rest of the wet ingredients in a blender or food processor.
Add in the dry ingredients to the wet.
Spread coconut oil all over your loaf pan and place the bread in it. Add any optional ingredients on top.
Bake for 45-60 minutes! Let it cool before slicing (if possible?). When there are 30-40 minutes left, add some sliced pears in the oven with cinnamon and maple syrup.
Enjoy your toast - we highly recommend topping the bread with vegan cream cheese, baked pears, and pistachios. Itโs the most deliccccc combination ever!
