Okey okey okey this is a really exciting post to write! Because I’m looking forward to you trying this cake so so much. Its quite easy to make, and the main ingredient - apples, are in season, so find your nearest garden and go get some 🍎🍎
This is a recipe from our book, Jordnært, that I wanted to make now that I’ve picked up lots of apples from our Airbnb garden (which you can read more about here).
Raw caramel apple cake
You need:
Bottom layer:
100 grams walnuts
300 grams raisins (preferably organic)
Filling:
2 apples
75 grams raisins (preferably organic)
4 tbsp agave or maple syrup
4 tbsp lemon juice
1 tbsp cinnamon
Caramel sauce:
8 Medjool dates
1 tablespoon nut butter (almond, peanut, hazelnut ++)
2 tbsp meltet coconut oil
1 tsp salt
1 tsp vanilla powder - optional (not vanilla sugar)
1/2 dl agave or maple syrup
How to:
Filling: Start by cutting the apples into small, thin slices. Add them to a bowl with raisins, sweetner of choice, lemon juice and cinnamon. Mix it together with your hands. Let them marinate in the bowl until the rest is done.
Bottom layer: Add the walnuts and raisins to a food processor. Blend until you get a sticky dough.
Assembly: Choose whether you want to make a cake or cupcakes. We’ve tried both, so its just a matter of what you're feeling right now. If you make a cake, spread the bottom layer in a cake tin with a baking sheet underneath. If you go for cupcakes, place small amounts of bottom layer into each cupcake. Place in the freezer for about 30 minutes!
Caramel sauce: Add all the caramel sauce ingredients to a food processor. Let it spin until you get a liquid consistency.
Put it together: Add the apple filling and caramel sauce layer by layer on the bottom layer. Put the whole thing back in the freezer and wait for it to sit.
Serve: Serve with delicious (vegan) ice cream!
