I have wanted to make baked cauliflower for such a long time! Seeing how easy it actually was to make, I really don’t understand why I haven’t tried before haha. Anyways. This is a recipe based on Minimalist Baker’s recipe - with some adjustments according to what we had at home. I hope you will try this one - it’s a true winner! For those who love vegan food, but also for the meat eaters. It’s filling, and you get all the textures and flavors - creamy, crispy, spicy, sweet, salty, mmmmm.
Baked cauliflower
1 large cauliflower
2 tbsp coconut oil
2 tbsp water
2 tbsp curry blend (we freestyled here, mixed together coriander, turmeric, cumin, ginger and chili)
2 tbsp maple syrup or honey
1/2-1 tsp salt
Fresh parsley
How to make the baked cauliflower
Preheat oven to 200 degrees celcius. Fill a small baking pan with water and set on the bottom of the oven to help the cauliflower cook evenly.
Rinse and dry the cauliflower. Cut off the bottom stalk, but don’t remove to much of the core.
Add all the rest of the ingredients to a food processor to make the sauce. Mix until smooth, and taste it. Adjust to your desired flavor.
Turn the cauliflower upside down and pour down half of the sauce. Shake it around to it enter into the cauliflower while keeping it upside down.
Pour the rest of the sauce on top of the cauliflower and spread it evenly.
Place the cauliflower in a skillet in the oven (ildfast form) and roast it for 35-50 minutes depending on the size of the cauliflower.
Chimichurri
3-5 cloves of garlic
1 medium chili pepper
1 cup cilantro
1 cup parsley
3 tbsp ripe avocado
1/3 tsp salt
3 tbsp lime
1 tbsp maple syrup or honey
1 tbsp olive oil or coconut oil
Water (depending on the thickness you want)
How to make the chimichurri
Place all ingredients into a food processor. Mix until smooth.
Adjust flavor as needed - salt, spice or sweetness.
Quinoa
Quinoa (preferably organic)
Salt
Water
Paprika spice
How to make the quinoa
Boil 2 parts for 2 part quinoa. For example 2 dl of water for 1 dl of quinoa.
Rinse the quinoa under hot water.
Once the water is boiling, add the quinoa, and turn the heat down. Let it simmer until all the water is gone (check the time on the package). Once the small “tails” have appeared, and it feels soft to chew, the quinoa is good to go.
